The Cave- Vintage 2008
In the late 16th century, as part of the construction activities of the Ottoman government in the country, a huge cave was hewn in the heart of the Carmel Mountains. The cave is about 80 meters long, 9 meters high, and 5 meters wide. Over the years the site was used for storing food products and towards the end of the 19th century, its designation was converted into a wine cellar and brandy. The ideal humidity and cooling conditions in the place - complete darkness, a humidity level that does not fall below 80% - and a constant temperature of about 18 degrees - made the cave a natural wine refrigerator. In recent years, the building has returned to a purpose that suits it best: aging and maturing cellar of quality wine, which also contributes its name: "The Cave Winery". The "Cave" Winery was founded in 2000 by the owners of Binyamina Wineries, whose goal, along with the commercial winery, was to establish a prestigious and high-quality boutique winery. To achieve this goal, professional winegrowers were selected and a lot of money was invested in first-class equipment. The task of all those involved was one: uncompromising quality wine production.
